Gluten-Free Breaded Chicken Burgers

Ever stared at your freezer and have a recipe just come to you? These gluten-free breaded chicken burgers came to me as I was staring down frozen chicken thighs needing to be used up. “Oh man, what if I use my trick for making ground chicken, make my own breadcrumbs, and make chicken burgers??” They turned out so good, I knew I had to put them on the blog to share!

I called these burgers, but they are good enough to eat all on their own! My husband and a friend eating with us wanted a bun, but my daughters and I ate them bunless. I love sauteed onion, so I was perfectly happy to dump a pile of those onto the burger. The cheesy, crispy breading is so delicious, ya’ll. I enjoyed dipping it into some of my homemade ranch.

Ingredients

1 lb ground chicken (store bought or make your own)

Breadcrumbs from one loaf of GF bread (Follow THESE instructions)

4 ounces of parmesan – use grated if you are not going to use a food processor

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp dried parsley

3/4 tsp salt

1/4 tsp pepper

1 large egg

Sliced provolone

White or yellow onion, thinly sliced

46 TBS salted grassfed butter or ghee

Instructions

  1. Preheat oven to 350 degrees F. Prepare a cookie sheet with parchment paper and set aside.
  2. Season breadcrumbs with garlic, onion, dried parsley, and parmesan. Since I make my own breadcrumbs, I tossed all these ingredients in the food processor BEFORE I made the breadcrumbs. I cut the chunk of parmesan into smaller pieces then ran it in the processor with the seasoning until the parmesan is fine. After the parm was fine, I tossed in the baked bread and processed to make breadcrumbs. Doing this with the parmesan and the seasoning made for perfectly seasoned breadcrumbs. Remove the breadcrumbs from the food processor into a separate bowl.
  3. Either make your own ground chicken or place store-bought ground chicken into a bowl. If making your own, you can leave the chicken in the food processor and have it mix for you. Add salt, pepper, egg, and 1/3 cup of the seasoned breadcrumbs to the chicken and thoroughly combine. Separate into 4 balls and shape into patties.
  4. Put the patties, one by one, into the bowl of breadcrumbs and ensure all sides are covered in breadcrumbs. Place on a plate until you get all patties covered.
  5. Place 3 – 4 TBS of butter in a skillet and heat on medium until melted. Place the breaded patties into the buttered skillet. Cook until each side is browned and crispy, approximately 4 minutes per side. Once both sides are browned and crispy, place the patties onto the prepared cookie sheet and bake in the preheated oven to finish cooking. The patties need to come to an internal temperature of 165 degrees F. This should not take more than 10 minutes.
  6. In the pan you browned the patties, add another 1 – 2 TBS of butter and saute the sliced onions until softened and caramelized. When your chicken patties have reached an internal temperature of 165, turn off the oven but leave the cookie sheet in the oven. Top the patties with slices of provolone and leave in the oven until the cheese melts. This should only take about 60 – 90 seconds. Plate the burgers and top with sauteed onions.
