MY STORY

As a working mom of two girls who lives with chronic fatigue, I have found that eating a cleaner, more whole-food diet really improves my quality of life! This can be a challenge, though. My goal with this website is to hopefully make the process of eating a diet free from gluten, refined sugar, and most dairy more achievable for others. I hope to share things I have learned along the way – both for you and your family!

Why do I eat this way?

I have dealt with a mood disorder my entire life, and I have lived with chronic fatigue for most of adulthood. I live in a sensitive body that needs a bit more intentional love and care. When I did my first Whole30 in 2023, I was really surprised how much better I felt! The redness in my skin and general swelling went down, my gut and bowel health improved, and I had a lot more energy. When I began reintroducing food at the end of my Whole30, I found the easiest thing I could stick to was living a gluten free diet. It seemed impossible to completely change the way I ate and give up refined sugar and really commit to eating mostly whole foods. But I embraced the challenge of learning how to live gluten-free. As a long-time baker, I found I enjoyed learning a whole new way to bake.

After about 18 months of eating gluten-free, I decided to do another Whole30. I realized very quickly that it wasn’t just gluten that was making me feel sluggish, red, and swollen. Sugar was a big factor in how I felt. I made it 30 days without added sugar and 60 days with no refined sugar and very little added sugar. When I tried to reintroduce refined sugar, I felt TERRIBLE! It became clear to me that it just wasn’t worth it.

I know that I feel my best when I limit sugar in any form, don’t eat gluten, and eat a lot of vegetables, fruit, meat, potatoes, and only a little dairy and baked goods. And I have learned to find joy in eating this way!  I promise there are still ways to have yummy foods that don’t feel like you have completely changed your personality. As an Okie, I am not the most adventurous eater and neither are my husband and kids, but we have learned! I am very content with how I eat now.
