I think I have officially decided that taco bowls and taco salads are better than tacos with corn tortillas – soft or hard. OFFICIALLY! Should I create a proclamation about it?? Hear ye, hear ye! What was I writing about again? Oh yeah – taco bowls! The loss of flour tortillas has been hard on me. And yes, I know, I can make one myself. I will tackle that project at some point. But damn, learning to make one more thing that used to be super duper easy just ruffles my feathers sometimes. Instead of fighting to force myself to love corn tortillas, I have pivoted. Enter the taco bowl! And a recent discovery that has taken said taco bowls to the next level – lime ranch slaw.



OMG, guys! This slaw is so simple but SOOOOOO yummy. I am in love. And if you make it without the corn, it is totally Whole30! Winning! It is fresh, has delicious flavor, and it is so easy to make. It is a great addition to taco salads or taco bowls using taco meat made with my homemade gluten free taco seasoning. I hope you love it as much as we do!
Preparation Notes
Now, once again, I cheated. I used store bought pico de gallo. I think you will hear me say that a lot – I bought store bought or premade. But as a working mom, I gotta pick and choose my battles for time. Sometimes store bought or premade is still a better alternative than where my eating habits have been!
My Paleo Homemade Ranch is superb here. Add a little bit of fresh squeezed lime juice and some additional salt and pepper, and you are golden! I like to have a container of this in the fridge at all times anyway, which makes this slaw super easy for me.
I am not a fan of spicy things, so my recipe does not call for any additional spice. If you like a bit of kick, I suggest finely dicing some fresh jalapeno to your spice tolerance versus adding hot sauce or powdered pepper. The crunch from the fresh peppers would be better in this recipe!
If you like cilantro (I do, my husband doesn’t), this is a great opportunity to dice up some fresh cilantro and toss it in.
Adding corn is totally optional. I really like the flavor and texture of corn in this, but if you are on a Paleo or Whole30 diet plan, omit the corn and you will still have a truly delicious dish!
PrintLime Ranch Slaw
This fresh, delicious slaw combines my favorite ranch dressing with fresh lime, crunchy carrots and cabbage, and avocado. Should you wish, add some corn for additional crunch and flavor, but leave that out if you are eating Whole30 or Paleo. Hope you enjoy!

Ingredients
1 (14 ounce) bag of fresh coleslaw mix (the bag with shredded cabbage and carrots)
1/2 cup pico de gallo (you can find premade in almost every grocery store near the salad mixes)
1/2 tsp salt
1/4 tsp pepper
1 or 2 fresh ripe large avocado, diced – start with 1 and see if you want more
3/4 cup Paleo Homemade Ranch Dressing
Juice of 1 fresh lime
1/2 cup corn that has been cooked and cooled
Instructions
- To prepare the slaw, cook your corn by your preferred method and then cool it down. Slice the avocado into small chunks. Cut your lime in half.
- In a medium bowl, mix the slaw mix, pico de gallo, salt, pepper, ranch, corn, and ranch dressing. Stir well. Squeeze lime onto the mixture and stir again. Fold in the diced avocado last so as not to smush it too much.
- Chill in the fridge for about 15 minutes before serving to allow the flavors to develop a bit and for the slaw to chill again.
- Serve on its own as a side or mix directly into a taco salad or taco bowl. I really like to make taco meat using my homemade gluten free taco seasoning, some white or brown rice, and mix the slaw into a taco bowl. Sooo good!
Notes
Unfortunately, the avocado in this doesn’t save very well, so this dish is best made no more than 30 minutes before serving.
